Prof. Dr. Reinhold Carle: Holds the chair 'Plant Foodstuff Technology', responsible for structuring the research.
Dr. Andreas Schieber: characterization of valuable compounds from by-products of plant food processing, and on the development of analytical methods for quality and authenticity control of plant food.

Processing of tropical and domestic fruits and vegetables such as mangos, apples and carrots is in the focus of their research activities. Particular attention to characterization of valuable compounds such as hydrocolloids (e.g. Pectin) and plant secondary metabolites, especially polyphenolics and carotenoids. Investigations on their stability during technological treatment. They are aiming at complete exploitation of the plant (circulation of material) in order to achieve sustainable production.

  • Cost/benefit analysis
